Marc Verstraete took a former Knights of Malta property and built a biodynamic wine estate across 30 hectares of Hérault vineyards, where organic viticulture follows lunar cycles and seasonal rhythms. The cellar—known as the Cathedral of Wine—is carved into a cave shaped like a colossal bottle, one of the most original wine cellars in France. Biodynamic practices govern every step, from cover crops to wild fermentation, producing still wines that express the Mediterranean landscape without synthetic intervention. Guests descend into the bottle-shaped cave for tastings that showcase the estate's biodynamic range, walking among barrels in a space where stone walls amplify the silence. Guided vineyard tours explain composting protocols, herbal preparations, and the property's commitment to soil health. Seasonal food and wine pairing sessions pair estate bottles with local cheeses and regional specialties, while the on-site microbrewery offers an unexpected counterpoint—craft beer brewed steps from the vines. Twenty-one accommodations spread across colorful village houses, each named after a grape variety and decorated with its own character. Cabernet might lean rustic, Chardonnay bright and airy, but all open onto views of the Hérault mountains or the estate's orderly vine rows. The layout recreates a Languedoc hamlet, with cobbled lanes connecting lodgings to the tasting cave and central courtyard. Spring brings the scent of blooming vines through open windows; summer evenings settle into quiet broken only by cicadas. Two on-site restaurants serve dishes built around what's ripe—tomatoes, stone fruit, lamb from nearby hills—matched to the estate's biodynamic wines.
