In 2010, Jens Skovgaard founded a winery to explore the potential of Danish apples, using cryo-concentration to craft unique fruit wines. This method intensifies flavors by freezing the wines to remove water as ice, without adding sugar. The winery's offerings include Cryo-Concentrated Apple Wine with a Nordic acid profile, Danish Pear Wine showcasing fresh fruit characteristics, Black Currant Wine with rich aromatics, tangy Rhubarb Wine, and aromatic Quince Wine. Each bottle reflects the local terroir, emphasizing the pure expression of fruit sourced near the production hall.
